I cannot survive without leafy greens. I literally need a TON of them to feel like myself. I made this delicious salad recently to pack in the nutrients all while staying strictly zero waste 😉

First, I laid a ton of fresh local raw spinach. I topped with some freshly cooked couscous tossed with purple cabbage and parsley with a squeeze of lemon. I roasted red peppers and sweet potatoes with shallots. Then, I added some roasted jalapenos with purple and green asparagus and squash.

Brunch is served!

It was nutritious. It was tangy. It was spicy. It was perfection!

Plant based. Whole Foods. Vegan. Zero Waste.
